Aloo Ka Pakoda Recipe

Aloo Ka Pakoda

 

Ingredients:

  1. 3-4 Potatoes (Aloo)Aloo Ka Pakoda
  2. 2 Cups gram flour
  3. 2 tsp Rice Flour
  4. 1 tsp Red Chilli Powder
  5. ½ tsp Turmeric Powder
  6. 3 tsp hot Oil for Batter
  7. A pinch of salt
  8. A pinch of Soda Bicarbonate
  9. A pinch of Asafoetida (Hing)
  10. 2 tsp Chaat Masala (Optional)
  11. Oil for deep frying

 

Procedure:

  1. Slice the unpeeled potatoes on slicer. Soak them in bowl of salted water for 10 to 15 minutes.
  2. Combine the gram flour, rice flour, 3tsp hot cooking oil, red chilli powder, turmeric powder, asafetida, Soda bicarbonate and salt for a taste in a deep bowl. Add sufficient water and whisk to make a thick and smooth batter.
  3. Heat sufficient Oil in a Kadai
  4. Drain the potato slices from the water thoroughly. Dip them in the batter as we created above till they get completely coated and gently slide in to the hot oil in Kadai.
  5. Deep-fry, occasionally stir till golden and crisp. Drain on absorbent paper (Tissue Paper)
  6. Serve Hot crispy Aloo Pakoda’s.

Bhadang or Bhadhang recipe

Bhadang

Ingredients
  1. Puffed rice (churmere/Murmura) – 250 Gms. 
  2. Red chilli powder – 1 tablespoon
  3. Turmeric powder – 1 teaspoon
  4. Cumin-coriander powder – 1 teaspoon
  5. Cinnamon powder – 1/4 teaspoon
  6. Clove powder – 1/4 teaspoon
  7. Powdered sugar – 1 teaspoon
  8. Aamchur (dry mango powder) – 1/2 teaspoon
  9. Garlic cloves – 5-6
  10. Peanuts – 1/2 cup
  11. Cashew nuts – 1/4 cup
  12. Dry coconut slices – 1/4 cup
  13. Curry leaves – 8-10
  14. Oil – 1/4 cup
  15. Salt to taste.

Procedure:

  1. Take a big kadai and heat oil in it. Add curry leaves and turmeric powder.
  2. Then add peanuts, then coconut slices and then cashew nuts. Then add chopped garlic.
  3. Fry it till it turn slightly brown. Let the oil get little cool.
  4. Now on the other side mix all remaining items. Then mix the tempering and mixture neatly. Let it cool down.
  5. You have to store this Bhadang in airtight container like any other chivda.  Have tasty Bhadang with nicely chopped onion and fresh coriander.

Gobi Manchurian 

Ingredients: 

  • Medium cauliflower
  • 3/4 Cup maida
  • 1-1/2 tbsp Garlic paste
  • 2 tbsp Oil
  • 1 tbsp Corn flour
  • 1-1/2 tbsp Ginger paste
  • 1 Cup finely chopped onions
  • 1/4 tsp Ajinomoto
  • 1 Chopped green chili
  • 2-3 tbsp Tomato sauce
  • 2 tbsp Soya sauce
  • Finely chopped coriander leaves for garnishing
  • Salt to taste
  • Water as required

How to make Gobi Manchurian:
• Wash and cut gobi.
• Combine maida, corn flour, salt and water to make a fine paste.
• Add a tsp of ginger and garlic paste to it.
• Dip the gobi florets in the paste and deep fry until golden brown, set aside.
• Heat oil in another pan and add the remaining ginger and garlic paste, chopped onions and green chili to it.
• Now, combine ajinomoto, soya sauce and tomato sauce with it.
• Add fried Gobi and mix well.
• Garnish Gobhi Manchurian with coriander leaves.

Dum Aloo Recipe

Dum Aloo is a very popular recipe. Learn how to make/prepare Dum Alu by following this easy recipe.

Dum Aloo

Ingredients: 

• 1/2 kg Small Potatoes
• A pinch of Asfoetida
• 1/2 tsp Turmeric Powder
• 1 tsp Chilli powder
• 1 Medium size onion (grated)
• 2 cup Fine Curd
• 4-5 Bay Leaves
• 1 tsp Ginger garlic paste
• 4 tbsp Ghee or oil
• 1/2 cup Milk
• Salt to taste

For Masala:
• 2 Cardamoms
• 7-8 Black Peppers
• 1 tbsp Coriander Seeds
• 1/4 tsp Caraway Seeds
• 4-5 Cloves
• 1 Small piece of Cinnamon

How to make Dum Aloo (Procedure):-

• Make a fine powder by blending together the ingredients of the masala in a blender. Keep it aside.
• Remove the peel from potatoes and prick them.
• Take oil in a frying pan and heat it for about one minute. Fry the potatoes on a medium heat until their color changes from white to light brown. Keep it aside.
• Add grated onion, asafoetida, bay leaves and ginger-garlic paste to the remaining oil.
• Fry the mixture till the paste turns reddish brown.
• Add the masala prepared and heat for about 2 to 3 minutes.
• Add turmeric, chilli powder and salt.
• Fry again for about a minute.
• Now pour the milk to make gravy followed by adding fine curd.
• Keep stirring continuously, add water if the gravy appears too thick.
• Now add pricked potatoes to this gravy and cook in a pressure cooker. Remove from the flame after 4 to 5 minutes just before the first whistle.
• Garnish it with fresh coriander leaves.
• Dum Aloo is ready to serve.

Tomato omelet (Vegetarian)

Most of the people from and around Maharashtra might know this simple and tasty vegetarian omelet. It is one of the special breakfast dish in Belgaum.

 

Ingredients:
3/4 cup gram flour(besan)
1/2 cup wheat flour(optional)
3/4 cup finely chopped tomato
1/2 cup finely chopped onion
1/2 tea spn chopped ginger
1 tea spn chili powder or 2-3 finely chopped green chilies
1/2 tea spn coriander powder(optional)
1/2 tea spn cumin powder(optional)
3-4 strands chopped coriander leaves

A pinch of Baking soda

A pinch turmeric
Oil/ghee
Salt

Method:
1. Take the water, gram flour, onion, baking soda, turmeric powder, chili powder, oil, salt, chopped coriander leaves,Ginger paste and tomato in a big bowl and mix all them to form a medium thick batter.
2. Now heat a skillet (tava) over medium heat. Smear the skillet with some oil and spread the above prepared batter on skillet.

3. Put a tomato slice in the centre of omlette.
4. When the omlette is cooked, pour a 1 tsp of oil over it and flip it over.

5. Cook the omlette from another side until the omlette is done.
6. Your tomato omlette is ready, serve alone or with tomato sauce and toasted bread.
