Maharastrian Phad – Appe recipe

Phad or Appe is a common breakfast in all parts of Karnataka and Maharashtra.
It’s easy to make this testy recipe.

Ingredients:-

• 4 cups rice
• 1-cup urad dal (black gram)
• 2-onions (finely chopped)
• 5-6-chillis
• 1 tablespoon caraway seeds
• Salt
• Oil

  • Soak the urad dal and rice in two different bowls (overnight).
  • In the morning grind to a smooth paste and mixture should be kept covered.
  • After 7-8 hours in this mixture add finely chopped onion, 5-6 grinded green chilies, 1 tablespoon caraway seeds.
  • Add salt.
  • Heat the appe mould and pour a few drops of oil into each depression. Once hot, pour a spoonful of the batter into each mould.
  • Cover and let cook on low heat for 3 minutes and turn and cook for another 2-3 minutes.
  • Serve hot with coconut chutney.

Maharastrian Puran Poli

Ingredients:-

  • 3 cup  Gram dal
  • 3 cup  Jaggery
  • 1 cup  sugar
  • ½  Nutmeg, 5,6 Cardamoms (green)
  • 3 cup Flour
  • 3 tablespoon  Refined flour, pinch of salt ,1/4 cup oil, rice flour

Procedure:

  • Wash the Gram dal & soak in plenty of water for about half hour.
  •  Add 3 cups of Gram dal in to Pressure cooker, 4-5 cups of water and pressure cook for 3-4 whistles
  • After 20-25 minutes open the pressure cooker and strain the cooked gram dal.Reserve the remaining water. You can use this water to make ‘Puranachya Katachi Amti’
  • Once water is removed completely, add this Dal ito a deep pan. Add Jaggery and sugar in it.Cook this mixture over medium heat.
  • The mixture will become thin due to Jaggery and sugar. Keep stirring over medium heat until mixture become thick.
  • Once this mixture cooked well, remove the pan from heat and add nutmeg, Cardamoms powder to this mixture while it is hot.
  • Grind it well in Puran maker.
  • Sift all purpose flour and refined flour together. Add ¼ cup of oil, Salt and mix well. Now add water little by little and make very smooth consistency dough. Squeeze the dough until it becomes very elastic. Put this doug into a bowl and cover it with cap.
  •  Make 1 and 1/2 inch balls of the stuffing. Also make 1/2 inch or double the size of stuffing balls of the dough. Grease your fingers and spread one dough ball gently to a small round disc. Put one stuffing ball on it. Spread the dough gently over the stuffing’s surface with fingers and cover the stuffing. Use dry all purpose flour to roll the Roti. Heat the tawa, place rolled roti in the center and roast on both sides over medium heat.

Masala Bhath (Masala/Spicy rice)

Masala Bhath (Masala/Spicy rice)

Ingredients:

  • 2 cups of Basmati rice/ or old rice (Long grain rice)
  • 250 gms Cauliflower
  • 1 Cup Green peas
  • 1 Cup carrot (Chopped vertically)
  • 1 Cup French beans (Chopped vertically)
  • 1 Cup grated coconut (Optional)
  • Coriander leaves
  • Oil
  • 5-6 Curry leaves
  • Pinch of Turmeric powder
  • Half inch Ginger and Garlic paste
  • ½ Cup cashew nuts
  • Salt

Masala (SPICES) :

1 tsp dry coconut, 1 tsp white Sesame seeds, 3-4  Cloves, 2 Cinnamon, 2, Cardamoms (green), 1 tsp Cumin seed, 3-4 green chillies.

Procedure:

  • Clean the rice in clean water and drain water from it.
  • Boil the water and keep it. The water should be double of rice quantity.
  • Take the Gobi florets from the cauliflower, Chop the carrot vertically (1 inch), Remove the peel from green peas, and Chop the French beans vertically.
  • Mix all these vegetables and clean with water
  • Take the Masala ingredients (Masala/spices) in the pan with ½ tsp oil and heat well.
  • Then grind this mixture and keep it aside
  • Take the thick saucepan add oil, Curry leaves and add Ginger and Garlic paste to it
  • Once this mixture fried well add all vegetable mixture to it (Prepared in step 3)
  • Once this mixture fried well add cashew nuts and also add Rice to it (Prepared in step 1)
  • Fry the rice well with this mixture and add the grinded Masala (Prepared in step 6) with boiled water.
  • Add pinch of turmeric powder and salt to taste.
  • Once rice nicely cooked, lower the heat and give a nice stir, cover with lid and let rice cook on medium heat.
  • While serving, Drizzle 1 tsp Ghee and sprinkle fresh grated coconut and coriander leaves if you like (Optional)

 Surmai Rava Fry Fish Recipe

Surmai Fish FryIngredients: 

  • ½ Kg surmai fish (King Mackerel Fish)
  • Ginger and Garlic paste – 2 tsp
  • Turmeric powder 1/2 tsp,
  • chilly powder  1 tsp.
  • salt ,
  • Rava 50 grams i.e Semolina (As required)
  • Oil 100 gram
  • Tamarind (In small amount)
  • 1 cup  jowari flour

 

Instructions: 

  • Clean the fish with water.
  • In a separate bowl, squeeze the tamarind in water and use this water  later
  • Add Salt, Ginger garlic paste, Turmeric powder, chilli powder and Tamarind water (Prepared above)
  • Mix well. Use this mixture to cover Surmai fish surface on all sides well.
  • Keep aside for 3-4 hours
  • In a frying pan heat oil. Roll each slice of fish into the semolina and with jowari flour mixture  so as to coat it completely. Put into the hot oil. When the base turns golden brown flip and cook on the other side till it is cooked through. Serve hot.

Mysore Bajji (Mysore Bonda)

Mysore BajjiIngredients:-

  • 1 Cup Maida (Refined flour)
  • ¼ Cup rice powder
  • 2 tsp Rava (Sooji) [Optional]
  • 1 Cup curd
  • 2 Green chilies
  • 1 tsp Salt (To taste)
  • 1 tsp Cumin seed
  • 8-10 curry leaves
  • ½ inch Ginger
  • 1 Onion
  • Pinch of soda (Bi carb)
  • Oil for deep fry
  • 1 Cup grated coconut

Procedure:-

  • Take Onion, Ginger, Green Chillies and curry leaves and grind to make fine paste
  • In a Bowl, mix Maida (Refined flour), Rice flour, sooji (Rava) and curd and keep it aside for half an hour or 1 hour.
  • To this batter, add paste created in step1, Jeera (cumin seeds), pinch of beaking soda and salt to make good mixture. The Batter should be thick, add water if required.
  • Heat the Oil for deep fry in a pan. Drop the batter with a spoon or with your fingers in to the oil carefully and fry until golden brown in a medium flame.
  • Remove and drain the excess of oil on a tissue paper (Kitchen paper).
  • Mysore Bajji  is ready to serve with coconut chutney
