Sabudana Khichadi – Sago Khichdi

Sabudana (Sago) Khichdi

Sabudana KhichdiIngredients:

  • 2 Cups Sabudana (Sago)
  • 2 Cups crushed groundnuts(coarse)
  • 5-6 green chilies
  • ½ tsp cumin seeds
  • Finally chopped coriander leaves
  • 1 Cup grated coconut
  • 2 tsp Oil
  • Salt for taste
  • Sugar

Procedure:

  • Wash sabudana nicely under running water so that no powder is left. Drain water completely and leave for 2 hours.
  • Add 2 cups crushed groundnuts to wet sabudana (Sago).
  • Take green chilies, cumin seeds and coriander leaves grand well and mix it in the above sabudana mixture. Add Salt and sugar for taste and mix well again.
  • Heat oil, add cumin seeds, above sabudana mixture and stir well.  Keep on simmer for 5 to 10 minutes till sabudana is cooked.
  • If you like you can add ½ lemon juice.
  • Remove from fire and serve hot garnished with coriander leaves and grated coconut.

Anda Bhurjee (Egg Bhurji) – Tasty Egg recipe

Anda Bhurgi (Egg Bhurgi)

Anda BhurgiIngredients:

  • 4 Eggs
  • 2 Onions finely chopped
  • 1 Tomato finely chopped
  • 2 green chilies finely chopped
  • Coriander leaves finely chopped
  • 2 tsp oil
  • Red Chilli powder ½ tsp
  • ½ tsp cumin seeds
  • Salt for taste

Procedure:

  • Take deep pan or Kadai and heat the oil. Add cumin seeds. Add finely chopped onion, green chilies and mix well. The onion color should turn to pink or brownish. Add finely chopped Tomato at this stage and mix well
  • In a separate bowl whisk the four eggs gently with a spoon for about 4 to 5 times. Keep this aside.
  • Finally add slightly beaten eggs to above mixture (Step 1). Add Salt, red chili powder and stir well. Keep stirring this mixture until small crumbs are formed. Continue whisking and stirring them for about 2 to 3 mins more. Once this mixture becomes slightly dry add coriander leaves and serve hot.

Maharashtrian Pav Bhaji – Spicy and testy

-: Pav Bhaji :-

PavBhaji in MarathiIngredients: 

  • 1/2 Kg Boiled Potatoes
  • 1/2 Kg Onions
  • 250 gms Tomatoes
  • 10-12 Garlic Petals, 1 inch Grinded Ginger
  • 1 tbsp Amchur Powder, 2 tp spoon Pav Bhaji Masala
  • 250 gms Cauliflower Finally Chopped, 250 gms Finally Chopped Capsicum
  • 200 gms Green Pees
  • 1/2 cup Refined Oil
  • 1 tbsp Red Chili Powder. Turmeric powder, Salt
  • 10-12 Pav Bhaji Breads/Pavs, 200 gms Amul Butter

Procedure:

  • Take the Potatoes, Boil them and mashed them using masher if possible.
  • Chop the Onions finely
  • Chop the Tomato Finely. Have prepared Ginger and Garlic paste by grinding it.
  • In Frying pan take 1/2 cup Refined oil and heat it. Saute half of chopped onion. Once onion is half cooked, add ginger-garlic-chili paste, Pav Bhaji Masala, Turmeric Powder, Red Chili Powder, Amchoor Powder. Give it a stir
  • Add chopped Cauliflower, Capsicum, and Green Peas and Stir it again
  • Then add chopped tomatoes. Cook the tomatoes over medium heat until mushy. Mash the mixture
  • Then add mashed potatoes to above mixture, add 2 cups of water and salt for taste
  • Cook the mixture for 10 mins on medium heat

Before serving, garnish it by adding a small cube of butter, finely chopped onion, coriander leaves chopped finely on Pav Bhaji.

For Bread Pavs, heat nonstick tawa (Flat Griddle). Pour 1-2 tbsp oil or butter on it. Cook one side till it become light brown. Then turn to other side and let it cook. Pour some butter around the Pav. Serve along with Pav Bhaji

Tips:

  1. While preparing the Bhav Bhaji (Masala -Curry) you can also add Carrot, French Beans or other Vegetables just make sure that we chopped those vegetables finely and boiled
  2. The above recipe is sufficient for 5-6 peoples.

Masala Papad – Recipe of Spicy Masala Papad !!!

MasalaPapad1Ingredients:-

  • 4 Papads
  • 1 Big Onion chopped thinly
  • 2 Small Tomatoes Chopped Finely
  • 1 tsp red Chili Powder
  • 2 tsp Chat Masala Powder
  • 2 tsp Fresh Cilantro Chopped
  • Salt to taste
  • Oil for Deep Frying

 Procedure:-

  • In a mixing bowl add Chopped Onion, Tomatoes, Salt and Fresh Cilantro. Mix well and Keep aside. We can call this mixture as Topping Mixture of Masala Papad.
  • Heat up Sufficient Oil in a deep Pan. Fry the Papad as we do regularly
  • Sprinkle some red Chili Powder and chat Masala Powder over the Fried Papads.
  • Now Spread the Topping of Onion and Tomatoes over the Fried Papads.
  • Again Sprinkle some Chat Masala over the Topping applied on Fried Papads.
  • Serve Immediately.

Tips:Masala Papad should be served immediately or it becomes soft and Spongy.

Indian Bread Pakoda – Pakoda recipe using Bread !!!

Bread Pakoda

BreadPakoda Ingredients:

  • 8 Slices of Fresh Bread
  • 3-4 Medium size potatoes
  • 1 Cup Besan (Gram flour)
  • 1 Cup water
  • ½ tsp Turmeric powder
  • ½ tsp Cumin seeds
  • 1 tsp Chili Powder
  • Pinch of soda (Bi carb)
  • Salt
  • Few Curry Leaves
  • 2-3 green Chilies
  • Coriander leaves
  • Ginger garlic paste
  • Oil for Fry

Procedure:

  1. Boil the potatoes and smash them immediately.
  2. While we smash the Boiled Potatoes in separate Bowl, Heat the Oil in Frying Pan. Add Cumin seeds, finely chopped chili, Curry Leaves, Ginger garlic paste and mix well. Add Salt, Turmeric powder and then add smashed Potatoes, Finely chopped Coriander leaves to existing mixture. Mix well again. In one or two minutes shutdown the Gas flame and keep this aside.
  3. Take one more bowl and add Besan (gram flour), Turmeric powder, Chili powder, Salt for taste, Cumin Seeds, Pinch of soda (Bi carb), Ginger garlic paste, finely chopped coriander leaves, pour water to this mixture. Make sure this mixture should not much thick or thin. It should be medium

BreadPakoda1     4. Cut the Bread slices in triangle shapes. On one of the Bread slice apply 2-3 tp of Potato Sabzi (The mixture prepared in step 2) and cover it with other Slice (As shown in below fig)

5. Heat oil for deep frying. Once oil become hot, dip one piece of stuffed bread (as prepared in step 4) into the batter and leave in       hot oil. Deep fry over medium heat until color turns to golden. Serve Hot along with Tomato Ketchup or with Chutney.
