Indian Recipe : Masala Bhath (Masala/Spicy rice) भारतीय पाककृती|| मसाले भात

Ingredients:

• 2 cups of Basmati rice/ or old rice (Long grain rice)
• 250 gms Cauliflower
• 1 Cup Green peas
• 1 Cup carrot (Chopped vertically)
• 1 Cup French beans (Chopped vertically)
• 1 Cup grated coconut (Optional)
• Coriander leaves
• Oil
• 5-6 Curry leaves
• Pinch of Turmeric powder
• Half inch Ginger and Garlic paste
• ½ Cup cashew nuts
• Salt

Masala (SPICES) :

1 tsp dry coconut, 1 tsp white Sesame seeds, 3-4  Cloves, 2 Cinnamon, 2, Cardamoms (green), 1 tsp Cumin seed, 3-4 green chillies.

Procedure:

• Clean the rice in clean water and drain water from it.
• Boil the water and keep it. The water should be double of rice quantity.
• Take the Gobi florets from the cauliflower, Chop the carrot vertically (1 inch), Remove the peel from green peas, and Chop the French beans vertically.
• Mix all these vegetables and clean with water
• Take the Masala ingredients (Masala/spices) in the pan with ½ tsp oil and heat well.
• Then grind this mixture and keep it aside
• Take the thick saucepan add oil, Curry leaves and add Ginger and Garlic paste to it
• Once this mixture fried well add all vegetable mixture to it (Prepared in step 3)
• Once this mixture fried well add cashew nuts and also add Rice to it (Prepared in step 1)
• Fry the rice well with this mixture and add the grinded Masala (Prepared in step 6) with boiled water.
• Add pinch of turmeric powder and salt to taste.
• Once rice nicely cooked, lower the heat and give a nice stir, cover with lid and let rice cook on medium heat.
• While serving, Drizzle 1 tsp Ghee and sprinkle fresh grated coconut and coriander leaves if you like (Optional)

साहित्य :-

• दोन  वाट्या  उत्तम  प्रतीचे  जुने  तांदूळ  किंवा  बासमती  तुकडा
• पाव  किलो  फ्लॉवर
• एक  वाटी  मटारचे  दाणे
• एक  वाटी  गाजर
• एक  वाटी  श्रावण  घेवडा  देठ  काढून  उभा  तिरका  चिरून
• एक  वाटीभर  खवलेला  नारळ [optional]
• मुठभर  चिरलेली  कोंथिबीर
• एक  डावभर  तेल
• फोडणीचे  साहित्य :- ५-६ कढीलिंबाची  पाने
• मसाला :- 1 स्पून  सुके  खोबरे,  एक  टे. स्पून  पांढरे  तीळ,  तीन  चार  लवंगा,  दोन  दालचिनीचे  तुकडे, दोन  मसाला  वेलदोडे,  एक  चमचा  जिरे,  ३-४  हिरव्या  मिरच्या.
• मीठ  चवीनुसार
• चीमुठ्भर  हळद
• अर्धा  इंच  आले,  ५-६  लसून  पाकळ्या  वाटून  ( ऐच्छिक)
• एक  मुठभर  काजू  पाकळी.

कृती :-

• मसाले  भात  करण्यापूर्वी  तांदूळ  स्वच्छ  निवडून,  धुवून  निथळत  ठेवावेत.  तांदळाच्या  दुप्पट  पाणी पातेल्यात  उकळून  ठेवावे.

• फ्लॉवरचे  तुरे  काढून  सोलावे,  गाजर  सोलून  मधला  दांडा  काढून  एक  उंचाचे  उभे  तुकडे  करावेत.  मटार सोलून  घ्यावेत.

• घेवडा  देठ  काढून  उभा  तिरका  चिरावा.

• सर्व  भाज्या  एकत्र  करून  धुवून  घ्याव्यात.

• मसाल्याचे  सर्व  जिन्नस  अर्धा  चमचा  तेल  घालून  कढईत  खमंग  भाजून  घ्यावेत  व  कुटावेत.

• जाड  बुडाच्या  पातेल्यात  डावभर  तेलाची  फोडणी  करून  त्यात  ५-६ कढीलिंबाची  पाने  आणि  आलं लसून  पेस्ट  घालावे.  ते  परतलं  गेलं  की  धुवून  ठेवलेल्या  सर्व  भाज्या  फोडणीत  घालावे.  भाज्या चांगल्या  परतून  झाल्या  की,  काजू  पाकळी  घालावी.  त्यावर  धुवून  ठेवलेले  तांदूळ  घालावेत.  तांदूळ फोडणीत  चांगले  परतावे,  त्यात  कुटलेला  मसाला  घालून  थोडा  परतून  उकळते  पाणी  घालावे.

• चवीनुसार  मीठ  आणि  हळद  घालावे.

• भाताला  चांगली  उकळी  आली  की,  गॅस  मंद  करावा  व  पातेल्याखाली  तवा  घालून  मंद  आचेवर  भात शिजल्यावर  उलथन्याने  एक – दोन  वेळा  ढवळावा.

• वरील  भाताचे  भांडे  सध्या  कुकरमध्ये   घालून  मसाले  भात  शिजवायला  हरकत  नाही.  पण  कुकरचे झाकण  उघडून  एक  दोनदा  उलथन्याने  हलक्या  हाताने  ढवळावा,  नाहीतर  मसाला  व  भाज्या  भातात नीट  न  मिसळता  भात  शिजल्यावर  त्याचा  थर  भातावर  जमा  होतो.

• मसाले  भात  वाढताना  आवडत  असेल  तर  खोबरे,  कोंथिबीर  घालून  साजूक  तूप  घालून  वाढावा.

दक्षता :-

• मसाले  भातात  आपल्या  आवडीनुसार  इतर  भाज्या  वापरण्यास  हरकत  नाही.  आवडीनुसार  पानकोबी  बारीक  चिरून,  भोपळी  मिरची,  वांग्याचे  मोठे  तुकडे,  बटाट्याचे  तुकडे  घालावेत.
